Ingredients
1kg apples (a combination of eating and cooking apples works best), peeled, quartered and cored
50g golden caster sugar
1 lemon, zest and juice
1/2 tsp ground cinnamon
(For the crumble topping)
150g plain flour
100g unsalted butter, cut into cubes
100g golden caster sugar
50g rolled oats
1/2 tsp sea salt
Method
Place the apples, sugar, lemon and cinnamon in a steam container and steam in an oven at 100°C for 5 minutes. This step will help soften the cooking apples before baking. If a steam oven is unavailable, place all the ingredients in a saucepan with the lid on and cook on a low heat for 5-6 minutes or until softened. Allow to cool slightly.
To make the topping, mix the flour, caster sugar and salt in a bowl, add the butter and rub with your fingertips into the dry ingredients. The mixture should have the texture of coarse breadcrumbs. Add the oats and mix well.
Pre-heat you oven to 180C (fan). Spread the apples in an ovenproof dish and sprinkle the topping over the apples. Bake for about 25-30 minutes or until golden and bubbling. Allow to cool for a few minutes before serving with vanilla custard.
